Yo El. I believe the flow of oil through a can type filter is in through the smaller holes on the perimeter and not through the center. Many times there is a check valve in the filter, and if there is a check valve and you blow into it in reverse you may not get any flow at all. Additionally all oil filters bypass oil flow at high pressure which usually occurs at high RPM so not much oil goes through the filter at 6000+ rpm it's just circulationg around. Last but not least I know the K&N filter does not filter the very small particles that the UPF44 does so there is less inherent pressure drop. So in the K&N you are circulating larger particulates than with the Delco. Probably not enough to hurt but bigger none the less. Same thing happens with a K&N airfilter it lets more dirt into your engine but at lower pressure drop.
Your blow test may lead to the wrong conclusion because of all of this.
Most oil filter do a very good job and the one you pick is a matter of preference more than a performance issue. If it meets the warranty requirements it is probably good enough. Besides 95% of all oil filter are made by 4 companies Wix, Purolator, Fram and Champion. There is not much difference between them. The UPF44 is made by Champion as are most Delco and Mobil filters. Champion filter usually have bigger holes around the perimeter and Frams have the smallest. A good way to tell them appart.

I understand your concern about the motor. The K&N is a good choice. I think Moroso makes a high flow filter for drag racing applications too.

El you are correct the less restriction the better for flow and that will keep everything oiled. Less restrictive filters will also not bypass as much oil at high RPMs so more of the oil goes through the filter.
You are on the right track for racing applications.
This is not a test, but at driving school, Spring Mountain, they run these cars every day, 6 days a week, from morning till night. Stock oil filter and reqular Mobil 1 oil just like the factory. Red line after redline after redline, student after student day in and day out. No failures. It is not a scientific answer, but an observation.
